Just a few things that I find annoying with the email notifications...

I don't think that [quote]s should be in the email sent out.
I also don't think that it should show &nbsp; when a user adds a double spacing. - Similar issues with other objects like <, >, etc.

MyBB 1.4 now includes a "plain text" parser which generates a plain text version of a message suitable for inclusion in emails and such.
