I know that there is a way to filter words with *** for example, but is there a way to completely stop someone from posting if a certain word is mentioned? Or a way to put that post into the moderation queue before it goes live?

not without a plugin (that does not exist AFAIK). MyBB filters words on the output/display of a post, not when the post is made.
