No, you can not change the copyright. However, you could add your copyright after the MyBB one if you would like.

I see a bit injust and annoying move/modify/delete the copyright, at the moment, the staff of MyBB do a great _FREE_ software, do you think if you remove the copyright the MyBB will be interested making alot of lines of PHP without get any credit? =(
