If I want to make a forum which unregistered users cannot view - do I just remove "View" from "Unregistered / Not Logged In" in the permissions.

What is displayed instead?

Sorry - its a live forum so I didn't want to test

Yes you can unclick that on the forum's permission view for guest. Nothing is displayed, the whole forum won't be shown so all your threads, etc will be safe inside from any unregistered viewing them.
