Some members have an asterisk after their user name when they are logged in, what does this mean? I suspect this is something very simple but I haven’t a clue.

It means they are invisible on the Who's Online list to non-admins.

Non-admins, non-moderators, and non-<everyotherusergroupthatisallowedtoviewinvisiblemembers>
IIUC this is what the asterisk means:
UserCP > Edit Options: Privacy: Hide me from the Who's Online list (checked)
