Hey ^_^

Sorry, I'm a serious n00b to mybb, & I would just like to know if it's possible. If so, how would I go about doing this??

ACP > Forums & Posts > *Category* > Moderators tab

From there you can either add single moderators, or assign a group to moderate the category and it's forums.
