I'm wondering how to edit the whole forumstats part of the theme. I found the index_boardstats template but it doesn't really provide any insight into how to do it or have anyway posibble to do it.

I see a variable $forumstats, where can I edit that variable, because that is obviously displaying the forum stats and the style.

You just need to edit index_boardstats template.

Here is list of stats variables and their values. Edit index_stats or index_boardstats as per you wish (you can do it in both ways).

Posts: {$stats['numposts']}
Topics: {$stats['numthreads']}
Members: {$stats['numusers']}
Newest member: {$newestmember}

Ok, so if I want the same result as http://simpuma.com/community do I edit the forumbit template or something and add what I need?

Its in Index_boardstats. You should edit it and make it looks how you wanted.
