I want to change the size of the logo and userbars. What is the max dimensions that I can use for them? Also, what other images are there on MyBB?

there is no maximum dimensions for the logo & images at user menu ; depends on your site width & users monitor sizes & resolution ..
basically banner type logo's width can be about 600px to 1080px .. height can be 100px to 400px . these are general dimensions ..
As ranjani said, the size is entirely up to you and depends on several factors - including your chosen theme and the average monitor size you wish to tailor to.
