I want different pages to show slightly different content (buttons etc) and understand I can do this by using two different templates in the same forum.

In Templates > Add Set I have created a copy of the default template. How do I now create Categories and Forums using that template?

Can someone at least tell me if it's possible to run two templates on one forum please? I'm sure I have done this when "playing" but can't remember how I did it.

You can run two template sets by applying a different theme to each set.

Then, in forum management, you select that theme as the theme and set it to override all other themes.

Assuming that by forum you mean board.
