well ive been doing some custom theme work on my forum, and i would like to know how i can change these:

u need to replace the ones on ur directory:

on.gif
off.gif
offlock.gif (i think this is the name, not sure)

urdirectory/images/theme/

i am running a Createmybb forum so im not sure if i have that.

You probably won't be able to change it via normal means (via FTP). You may want to ask CreateMyBB Support to help with that issue.
