I'd like to change where it says

To something like

http://theprofiters.com/user-6

Or something similar to that,

Rename htaccess.txt to .htaccess then navigate to ACP > Configuration > Server and Optimization Options and set Enable search engine friendly URLs? to Enabled.

I did everything you said, then when I tried to open a forum section I received a nginx error message saying that section couldn't be found,

It would be automatically converted to such format once you enable SEF and do the edits of htaccess as already mentioned.
I just get this message when I change it,

Nginx does not support htaccess apache modules (mod_rewrite).
