I was wondering. Is there any way to enable moderators (non-admins) to edit the help documents? Because our forum is thinking of making it like a documentation section for our service, and I was wondering if this was possible.

Possible but not without a plugin.
One option later hit my mind. try this;
AdminCP > Users and Groups > Admin Permissions > Configurations tab > and select "Yes" in "Can manage help documents?" option. Select No to all other options. However it first needs to make sure that you allowed that Moderator group to access AdminCP.
If you need to allow them to edit right from their ModCP then it certainly needs a plugin.
