When can I find more information about helping out with beta testing for MyBB?

For MyBB in general or for 1.8? 1.8 should be available on Github soon so people can checkout and test features. Tomm'll have everything prepared so you know the workflow.

1.6.9 would be great. Surely that's stable enough to use on a live site with moderate load?

As soon as Tomm gets Github and Redmine sorted then we'll be making the repositories public. Until then I'm afraid 1.6.8 is the closest thing you can get your hands on.
