When you create a new theme, and you get to select the parent theme - what is the difference between "MyBB Master Style" and "Default"?

The difference is inheritance. If you want to make a new theme from scratch, choose the master as parent; if you want to make a spin off of an already customized theme, choose that customized theme as parent.

Sweet! Thank you. Does each theme then have their own set of stylesheets? Where would they be for my first new theme based off of "Default"?

If it is edited then it then becomes its own style however if you leave it as many do with some it will stay inherited by the parent theme.
