For some reason my users signatures wont display in threads (Works fine for Admins).

I have logged into their accounts and don't know whats wrong.

Their signatures show fine on their profile, but not in threads, and I have checked the post bit template and signature is there.

The problem is, their primary usergroup (VIP), has permission to use signatures, the users that have "Additional User groups" set as their display, their signatures wont show.

My guess is the usergroup they have chosen to show does not have signatures enabled. Check the settings for the groups they are part of and see if you can't spot the configuration error.
