This is pretty simple I guess, my forum has members that belongs to 3 different group. How do I make them be able to change their display group?

When you are making some group you will see option Under Publicly Joinable Options :
Yes, users can set this group as their display group
If set to yes, users will be able to set this user group as their display group for user titles, stars, name style and group images.

I can't do this to any group that was there by default example Mod and Super mod.
Tell the member to do this.
Go to Usercp>Group/Group Memberships>Group>Set as display group
