Is there a way to hide the members list from guests looking in to my site.

A simple way would be to change the link on the header_welcomeblock_guest to point to the index page or something although it wouldn't stop them if they had the direct link.

Go to ACP > User & groups > Groups > Guests > Miscellaneous > uncheck the can view member list > Save user group
