I'm still hoping someone can point me in the right direction for this, so time for a new thread which might help make it clearer what I'm after



The buttons displayed there that are the blue default for MyBB, where/how do I change them?

All the buttons are located under "Postbit Template" series individually.
Check back one by one for respected button images.

Example:
"Find" button located in "postbit_find" template with the following image path:

<img src="{$theme['imglangdir']}/postbit_find.gif" alt="{$lang->postbit_find}" title="{$lang->postbit_find}" />

Change the path to your own button image.

If you'd like to edit the default images that come with MyBB, you can download the GDK in this thread:

You'll need a graphics editing software like Photoshop or Gimp (free) to do this.

I'm having difficulty finding the "New Topic" button's template. I thought it might be, "showthread_newthread", but when I changed that there was no difference. So what is that one and the one for the New Topic button please?

You are partially right. The "New Topic" button is located in "forumdisplay_newthread" template as well as "showthread_newthread". You have to edit both the templates for this.
