Is there a way I can keep my theme and plugins on my site, but remove the users and posts?
As in, a restarted database, restarted stats page and everything. But keeping templates and that goodness.

Well you can go into PHPMYADMIN and empty the posts, threads, and users tables.
Not sure if that's the best way to do it though.
I'm not sure, as I'm new like you but wouldn't deleting the users and forums and then recount everything to reflect it as it's correct value. I'm sure there is a much easier way, though.
