Is it as simple as deleting all the files and folders in the root directory and uploading a new copy or is there something else I need to know?

Delete your MyBB's files and folder, delete all the tables in the database. Then install MyBB as you did the first time. Basically this.

You also need to drop the schema in the database, or you can use a different schema/table prefix.
