I've used Google fonts before on other forum softwares, but for some reason it doesn't want to work in MyBB. I've tried adding the import link to the header template and the index template but it just ends up going to a fatish Arial.

Any suggestions to figure out what's going wrong?

You'll need to add it in the headerinclude template. Go into Ungrouped Templates > headerinclude and paste the link tag after the stylesheet variable "{$stylesheets}".
