Where in the template set do I find the code I need to modify/remove in order to remove the "Post Options" section?
What do you mean by Post Options?
There are "Post Options" for each post: signature, disable smilies. I wish to hide this section.
In your New Reply & New Thread templates. It's located near the end just before {$modoptions}.
You'll see "signature" and {$disablesmilies}
It's the whole <tr> section for the Post actions. Make sure you remove it from New Reply & New Threads. Don't remove {$modoptions} as that is for the options to sticky threads and such for mods/staff/admin.
