How many sites are there selling mybb skins? also as it is a free board software do you think that many people would actually pay for a skin?

Yes. If it's a well done skin, why shouldn't that person be compensated for their hard work?
If it's just a matter of just changing out images, barely touching the templates and calling it a "skin", I would consider that a rip off.
Not sure about your first question. I don't know of many.

We're actually in the process of further developing a few themes for MyBB, once of which has already been released (MyBB Business).
The theme changes are minor, though we are looking for user input on the styles we release to further guide us to what type of themes users are looking for or are in search of.
