So I have the theme, named stb (simply the best) and some of the buttons are still in a foreign language even though the language is set to English.

How can I get these set back to english
Those texts are hardcoded in templates. And the buttons you have snapped are postbit buttons.
Go through "Post Bit Templates" group (such as postbit_email, postbit_find, postbit_www, postbit_quote, postbit_warn etc.) for the button templates (easily identifiable by the names) and replace the texts with your own or default variables.
