Just edit out what you don't want in your templates.
The stats can be disabled in the "Forum Home Options".

Right click on the element in your theme you want to get rid of, press "Inspect Element".
Now look at the HTML in the inspector -> you should see green comments that tell you what template it is in, find that template, remove the line that refers to the feature you would like to remove and you are done.
It's not that hard.
