Instead of "This sub, That sub, and 3 more...". Anyway to have all of them listed?

see this. you can put there a higher number (eg. 99)

You would have to increase the limit of sub-forums to display. You can edit/change the limit in your ACP.

ACP > Configuration > Forum Home Options > Subforums to show on Index listing
