If I change my hosting, is there anyway I can keep all my plugins & stuff, without having to re-upload them all!?!?!

When you download a backup of all your files through your FTP, all your plugin files would be included. When you download your forum database, all the settings and your templates would be included so you won't have to reinstall anything.

It is recommended though to disable all the plugins, take file & DB backup, switch host, set proper cookie domain and re-enable plugins.
