I can't update my version of mybb (currently 1.1.8) because I'm using the cash mod that is not replicated in the 1.2.2 release. Are there any security issues that I may face if I am still using the 1.1.8 release?
I know that Chris has released 2 patches for 1.1.8 since 1.2 was released. You definitely need to do those patches!  Just do them in the order they were released!

But I do think that support for 1.1.8 has run out, so there shouldn't be anymore patches released after these!
Very true. Support for MyBB 1.1 has run out, so at the next security hole found, it is recommended to upgrade to MyBB 1.2.3
My understanding is yes, we do not support the 1.1.x series anymore. You are strongly advised to upgrade to 1.2.2, apply any future patchs, and upgrade when new versions are released. To answer your question, there might be unknown security related issues with the 1.1.x series and no, my understanding is we will not be providing patches. Contine use at your own risk.
has there been any hacking/defacing of mybb boards? I would update but I can't because there is no updated version of the hack that is required.
Just apply the updates suggestion and you should be fine, until a new exploit is found in your version. And upgrade as soon as possible.

IMHO there's a higher chance of being hacked/defaced using an old board with known exploits, than a board with the latest version with unknown exploits.
