Is there a way to restrict which actions a global/super moderator can perform? For example, what if I want to disable them from deleting threads?

We have a plugin called MyPermissions to set permissions or take away certain actions from any group.

Also, if there was a thread deleted by mistake, we have another plugin called Undo Delete which will be back the thread.
