I wan to remove the "Started by: text in the thread lsiting so it just displays the username of the thread starter under the thread title. I've looked and I can't seem to find it, I feel like I'm looking right at it, but maybe I'm not.

I think it has to do with my template actually, correct me if I'm wrong?

yes, it is used in the forumdisplay_thread template

if you also want to change similar display for the announcements then check forumdisplay_announcements_announcement template
