This would re-quire either a re-write of the plugin or an additional plugin which calls the names of the prefixes instead if you are wanting to sort by each individual prefix. If you are only wanting to change the wording you need to edit the specific language file that came with the plugin. If there wasn't one that would suggest the text is hard coded or pulled directly from the database. Either way, you would have to edit the plugin in this case.
