I am trying to figure out how to display Forum stats in addition to board stats.

Hi Arbaz, I have seen mybb forums display Latest posts list, Most views, Most replies etc in a block at the bottom of the page in a summary tagged Forum Stats, so I was wondering how to activate that feature in the admin CP.

We have a tutorial on this; You need to modify some templates.
