Yes, you should be fine using Hostgator for MyBB.
I use Hostgator for my site.
Most major label hosts (eg. HostGator, GoDaddy, EZPZHosting) will be able to host MyBB out of the box with no changes.
tbh though I really could take or leave GD and please don't get me started on HostGator.

I can confirm this, I've been with HostGator for about 2 years now. No problems.
I have worked for a few places and they all had constant issues connecting to HostGator for email. They then switched to FatCow (bear in mind that these two are owned by the same company) and the problem still persists.
EIG and inherently HostGator's and FatCow's business practices come off a shady to me.
