Half of my forum categories are how they should be, and the rest including the board stats have changed to full width and text alignment to centre. Why is this?

You have one or more extra unnecessary close div tag (</div>) in your page somewhere near the problem starts. Thats all can be said at the first place unless we see the real problematic page.
