I was hoping someone could help me with the post via email settings.

These are the parts i've filled in, but it's still not working correctly, any ideas?
Also the plugin seems to be quite out of date at the moment.

The IMAP folder number you want to retreive emails from. Default = 0 (Inbox) So 0

Forum
What forum the thread should be posted in if the MyCodes [fid] or [fname] are not specified or invalid.

I am willing to pay for someone to write this or make this work for me!!

Gmail requires SSL when connecting to IMAP, and I'm going to guess that the plugin doesn't support it (at least I don't see an option for it in your screenshot).

Correct, that is all I can edit in the plugin.
Although the plugin page says it works the best with Gmail.

Any idea's?

If anyone can edit the plugin or write a new one, I'm willing to pay them.

It works fine for me. at first it didn't work, then I found in the source code, the email has to be marked as NOT read in order to process it, otherwise it won't process. Also make sure to turn on imap in your gmail.

I added a couple of add_task_log for debugging purposes, so you won't find all the log details as seen in the screenshot in your mybb board

Is this plugin working wit MyBB 1.8?
