How do I change the colour to all the categories? Right now they are all white but I want to change it.

I know I have to go in the ACP then Themes and then Edit but I don't know what to edit..

you can change those colors in global.css stylesheet (edit in advanced mode) 
.thead a:link {color: #ffffff;}
.thead a:visited {color: #ffffff;
