I made a bunch of changes to my theme templates, if I upgrade my forum to 1.8.1 will I lose all of these changes?
Not necessarily, but could happen. A lot has changed in 1.8.

No. I use a heavily customized theme and didn't need to adjust any templates after upgrading.
Indeed, upgrading from 1.8.0 to 1.8.1 shouldn't be a hazzle
