I write a LOT in forums. I want to know how many words I've written without copying and pasting the post into some other place over and over. 

Does anyone know of a plugin that adds a word count to the posting/editor window? Or has a button we click for word count?

If not, how hard would that be to make?

You could try the Character Count plugin.
Beside the typed and remaining characters, in the version for MyBB 1.8 it shows a simple word count too below the editor.

I already installed the extensions and look forward to using them.

I finally settled on a Chrome extension called Word Count, which works fine for most things on the web. I also have a doylecc's forum plugin called Character Count, which is automatic in the forum. He has it on his site, with some other interesting-looking plugins: http://mybbplugins.de.vu/. \

I really like Character Count a lot. It works perfectly and it's pretty much seamless. .
