After the update from version 1.6.5 to the latest version 1.8.3 i've found out that the new posts don't have the datetime (the old posts are ok).
Is there any fix to it?

MyBB 1.8.x uses relative time for the most recent posts (like 16 minutes ago, yesterday, ...)

As you can see there's no relative time, the date is a blank line.
There's also another bug, when trying to delete a post using the X button it appears the editing screen and the post can not be deleted.

first it would be better to install a theme fully compatible with MyBB 1.8.x and use it

if MyBB 1.8.x stock theme is working fine then you can make it as the default theme & check it
if you want to use earlier version's theme then follow below guidance

Now there's the default theme of mybb 1.8.3 and the datetime of all new posts are still blank (i've also tried to post a new one, but nothing).

^ default theme also needs code changes as per the guidance quoted above.
instead, its better to install a new theme compatible with MyBB 1.8.x and use it
if you still have the post date issue, you can PM me temporary access to admin panel to check

Your forum is using Italian language. it also needs to be updated for MyBB 1.8.x
you may have to use English language until you find Italian pack for MyBB 1.8.x
And as suggested earlier your forum also needs a theme fully compatible with MyBB 1.8.x
