MyBB version is: 1.6.16 (1616). Now, if I upgrade MyBB to 1.8.3, will my themes or anything else stop working? Will there be something not supported with that version? I want to know if I should upgrade or not.

certainly your current theme of 1.6 will have quite a lot of issues on 1.8... you need to upgrade it manually (not easy though) or use a theme compatible with 1.8... few plugins can be updated just by changing the compatibilty and few have the updated version on mods site.. however few plugins might stop working....
