I'd like to change the "4/5 more" to listing the actual subforums.
How could I do that and which template set would it be in?

Increase the number of forums you show on index in the ACP settings.
Board Settings ยป Forum Home Options
Subforums to show on Index listing
The number of subforums that you wish to show inside forums on the index and forumdisplay pages. Set to 0 to not show the subforum list
