I'm just wondering if it's worth it for me to create a tableless template for 1.8, or just wait for 2.0 and create one for 2.0 if it will not have one by default.
Depends on how soon you want it. 2.0 isn't eons away, but it's not happening within the next several months either.
If you *really* want it now, make it for 1.8. Otherwise, I'd recommend just waiting for 2.0 since the theming system there will look a lot better.
Also 1.8 will be supported for a while after 2.0 is released.

I saw some of the tableless templates currently available, but none of them were a perfect iteration of the default MyBB theme, which I think would be much better as a base for others to use ... so I'm thinking I might make my own perfect iteration.
