I edited/removed mybb .php files, styles and themes, basically everything and I built a site around it.
Will this be affected by updating MyBB?

yes. you have to keep track of the edited files and do the edits again after updating MyBB.

for the MyBB source files, you can run file verification tool available at tools & maintenance section of admin panel

What is the benefit of updating?

I understand that you are using MyBB 1.8.4. recent version 1.8.5 is a security & maintenance release. see 1.8.5 changes

do you perhaps know if it will include ctrl-b shortcuts etc?

Ctrl-b (bold), Ctrl-i (italic) and Ctrl-u (underlined) already work in 1.8.4 and 1.8.5.

Oh yes I see now.
It just seems to not work when you don't have any text yet, it won't pickup the format
