In the Admin CP unapproved posts appear can I turn it off so everyone can post without having to be approved first?

By default posts do not need to be approved, you must have set it so that they do. Check the settings on your forums and make sure you haven't made it so that they need to be approved.
Check you haven't changed the settings in the groups as well.

Users & Groups > Groups > {select_group} > Forums & Posts > Moderation Options - uncheck all boxes under that section.
