Honestly, 1GB is enough. More is great, but basically unneeded for the normal user (which most of us are).

there's no such thing as enough RAM....it never seems to be enough! 
I don't want to have to think how many apps I can run at one time, or I don't want to think if I should have to increase my filecache etc....I paid enough for the computer to have it do it smartly for me....and since I can't trust MS to do the memory-handling...I'd rather have 8GB of RAM so I don't have to have swap-files...
I currently have 1GB but might order another 1GB soonish....
I've also thought about playing around with virtualization a little....and having linux/xp/vista or whatever combination of OSs running at the same time would require considerable amount of RAM

my PocketPCPhone has twice that amount of system RAM even managed to play PocketUFO with it...threw the Quake for PPC away as it wasn't fun
