MyBB would be absolutely perfect for my needs save for one critical component which I have need of: the ability to display image attachments larger than thumbnail.

Granted, I could always use CopperMine but would prefer not to.

Is there a setting with CP that will permit the User to make an attachment that will exceed that of the current thumbnail size?

Yes...in admincp settings you can define thumbnail size...make it any size you wish.
