You mean the actual webserver application I take it.

Sorry, I don't understand that sentence.
I haven't had much experience of web servers out side of Apache.

lighttpd I hear is great...I use apache myself.
lighttpd is awesome for my static content serving, while Apache is perfect for anything that needs real cool features, and dynamic serving. I use worker MPM of Apache 2.2.x (its memory leaks are over-rated, it works pretty good with dynamic content too).
IIS is alright too, if you're on windows and the only option you got when you need to use ASP .NET (comeon, all those modules to introduce that support on linux are crap).
