Once extracted on the local machine, can these be uploaded via FTP and just overwrite the existing files?

Or should Package Manager be used to do the update?

I'm not aware of a "Package Manager"....

My mistake, I was thinking of the Plugin Manager but that is not germane here in any event.

Be that as it may, should these files just be uploaded via FTP and overwrite the existing files? Or need they be imported?

I am new to MyBB, hence the questions.

There is no "Import" feature.

All updates are applied through FTP and then the upgrade script is run if necessary (not for the 1.2.6 update)
