From security point of view is it safe to use old themes usually mybb shows warning and there is an option to ignore version compatibility to go on and install the theme.
Also
Is it secure to enable users to use html code in their posts because most forums i see have html disabled which is also default.

When you use an old theme like that there is a risk of some forum options not working correctly; using a 1.6 theme on 1.8 will need a fair bit of work to get working correctly.

Re HTML - do not enable html for all users. That is a security issue.
