Using the default Theme that came with version 1.8 of myBB.

How can I alternate colors for the background so it becomes simpler to read.

Can the header also be moved from the top of the post to the left side in a simple way?

For the firt question go to your global.css and find this.

This two are for first and second rows and alternates for next ones.

^ MyBB 1.8.x stock theme doesn't use alternate table rows for the post messages.
if required css pseudo-class-expressions should be tried ..
